Crunchy Ranch Baked Chicken

We all need another option for baking boring chicken breasts into something delish! This one is full of Ranch flavored crispy crunchiness.

Ingredients:
4 chicken breasts, boneless, skinless
1 cup cornflakes cereal, crushed
1 packet Ranch dressing mix, dry
1 egg
Kosher salt and freshly ground black pepper, to taste
Extra virgin olive oil, for drizzling

Directions:

  1. Pre heat oven to 400 degrees F.
  2. In a large zip lock bag, shake together cornflakes and ranch dressing mix. Set aside.
  3. In a small bowl, whisk together egg with 2 Tablespoons water. Set aside.
  4. Using a meat mallet, gently pound chicken breasts to even thickness.
  5. Generously salt and pepper both sides of chicken breasts.
  6. Dip each chicken breast in egg wash, then shake in cornflake mixture, coating completely. (Press mixture onto each breast to help it stick.)
  7. Place coated chicken breasts on a baking pan and drizzle with olive oil.
  8. Bake 20-30 minutes, depending on thickness of chicken, until cooked thru and lightly browned.
