Chickpea Mediterranean Pasta Salad

Pasta + chickpeas makes for a filling vegetarian meal that does not disappoint. Plus it’s a great make-ahead meal, it stays all week in the fridge.

Ingredients:
1 lb. spiral pasta
1/2 cup feta cheese, crumbled
1/2 cup kalamata olives, pitted and cut in half
1/2 cup sun-dried tomatoes in oil, drained
1/4 cup red onion, diced
1/4 cup capers
1 can garbanzo beans, drained and rinsed
Fresh ground black pepper, to taste
Your favorite Italian dressing, to taste

Directions:

  1. Cook pasta as directed on package. Drain and set aside to cool.
  2. Mix cooled pasta, Italian dressing, and all other ingredients in a large bowl, until combined.
  3. Put into a large container and seal tightly.
  4. Chill in refrigerator at least 1 hour before serving, so flavors combine. If it seems dry, add a splash more Italian dressing prior to serving.
