Ingredients:
1 lb. spiral pasta
1/2 cup feta cheese, crumbled
1/2 cup kalamata olives, pitted and cut in half
1/2 cup sun-dried tomatoes in oil, drained
1/4 cup red onion, diced
1/4 cup capers
1 can garbanzo beans, drained and rinsed
Fresh ground black pepper, to taste
Your favorite Italian dressing, to taste
Directions:
- Cook pasta as directed on package. Drain and set aside to cool.
- Mix cooled pasta, Italian dressing, and all other ingredients in a large bowl, until combined.
- Put into a large container and seal tightly.
- Chill in refrigerator at least 1 hour before serving, so flavors combine. If it seems dry, add a splash more Italian dressing prior to serving.
This is yummy! I made it to take to my aunt’s for Fathers Day. It was a hit!
