We all need another option for baking boring chicken breasts into something delish! This one is full of Ranch flavored crispy crunchiness.
Ingredients:
4 chicken breasts, boneless, skinless
1 cup cornflakes cereal, crushed
1 packet Ranch dressing mix, dry
1 egg
Kosher salt and freshly ground black pepper, to taste
Extra virgin olive oil, for drizzling
Directions:
- Pre heat oven to 400 degrees F.
- In a large zip lock bag, shake together cornflakes and ranch dressing mix. Set aside.
- In a small bowl, whisk together egg with 2 Tablespoons water. Set aside.
- Using a meat mallet, gently pound chicken breasts to even thickness.
- Generously salt and pepper both sides of chicken breasts.
- Dip each chicken breast in egg wash, then shake in cornflake mixture, coating completely. (Press mixture onto each breast to help it stick.)
- Place coated chicken breasts on a baking pan and drizzle with olive oil.
- Bake 20-30 minutes, depending on thickness of chicken, until cooked thru and lightly browned.
Dee-lish! A tasty variation – nice and tangy! No mallet – so I cut chicken into strips. Extra crunchy goodness. 🙂
