Baby Greens with Feta, Pine Nuts, and Dried Cranberries (The Shona Salad)

My friend Shona makes this salad, that is, in a word, addictive! I’m not lying when I say that I eat this about 4 days a week for lunch. It’s super quick to make, packed with healthy stuff, and tastes sooooo good! I add diced cooked chicken breast and chopped green onions to mine to make it a meal, but skip that if you want to serve this as a side salad. As usual with my salad recipes, there are no amounts listed under the ingredients. Throw in as much or as little as you like of each ingredient, depending on how much you want to make. Ingredients:
Organic baby greens lettuce mix
Pine nuts, toasted
Feta cheese, crumbled
Fresh carrot, peeled into thin ribbons
Dried cranberries
Kosher salt and freshly ground black pepper, to taste
Extra virgin olive oil
High quality balsamic vinegar

Directions:

  • Place lettuce in a large bowl.
  • Top with pine nuts, feta, carrots, and cranberries.
  • Season with salt and pepper, to taste.
  • Toss gently with small amounts of olive oil and vinegar.
  • Enjoy right away!
