KP Greek Salad

I love-love-love a good Greek salad! The flavors are so fresh and bold. Here’s my take on a classic Greek. Top with grilled chicken to serve as a main dish. As with most of my salad “recipes”, I leave the specific amount of ingredients up to you. For the dressing, drizzle equal parts olive oil and red wine vinegar over the salad. Sprinkle with salt, pepper, and oregano. Enjoy!

Ingredients:
Leaf lettuce, chopped
Canned beets, sliced
Canned chickpeas, rinsed and drained
Mild pepper rings
Fresh grape tomatoes
Red onion, sliced
Walnuts, chopped
Feta cheese, crumbled
Fresh or dried oregano, to taste
Kosher salt, to taste
Freshly ground black pepper, to taste
Equal parts extra virgin olive oil and red wine vinegar

Directions:
Toss everything together and devour!
