Big Salads are serious salads. They’re main meals in their own right. They fill you and fuel you. This one is packed with protein, power greens, and fresh fruit. The recipe below makes one Big Salad, so double or triple as needed.
Ingredients:
3 handfuls organic spinach/arugula mix
1 cup cooked organic chicken breast, chopped
1 hard boiled egg, chopped
1 green onion, chopped
1/2 avocado, diced
1/2 organic Honeycrisp apple, diced
1 Tablespoons roasted sunflower seeds
Drizzle with poppy seed dressing (my fav)
Directions: Throw it all in a bowl and toss. Dig in!
