I may be clinically addicted to this salad. I’m not joking. I think I need professional help to stop eating this. Not sure if it’s the sweet, or the crunch, or the dressing, or the combo of it all, but once I start with a bowl of this I cannot stop. Luckily it’s healthy, so I’m not doing too much damage. One stop at Trader Joe’s and you’ll have all the ingredients–so get going! Oh, and we have my friend Jennifer to blame for this latest addiction 🙂
Ingredients:
1 (12 oz.) bag fresh broccoli florets, chopped into bite-size pieces
6 oz. (half a bottle) Trader Joe’s Cranberry Walnut Gorgonzola Salad Dressing
1/2 cup dried cranberries
1/4 cup goronzola cheese, crumbled
1/4 cup walnuts, chopped (or sub with salted sunflower seeds–also good!)
Directions:
- Throw everything into a bowl and stir. It’s that easy.
- Cover and refrigerate 1 hour before serving.
KP – I served this last night to my bookclub and everybody loved it! So good…so easy! Thanks for posting it!
Yay! Thanks for the comment Rach 🙂 What book are you guys reading? I\’m half-way thru Reconstructing Amelia and loving it!!!
What would be your 2nd choice as a dressing for the Broccoli Cranberry Salad ?
For those of us not near a Trader Joe’s.
Hi Karen, I think any type of Raspberry Vinaigrette would be good on this salad. Something sweet and tangy! See you soon! KP
