Here’s my go-to recipe for classic potato salad. It’s lighter and fresher than store bought, and doesn’t taste like a big blob of mayo.
Ingredients:
3 Tablespoons plain Greek yogurt (I use full fat)
3 Tablespoons mayo
2 Tablespoons fresh lemon juice (do not use bottled)
1/2 cup green onions, chopped
1/3 cup celery, diced
2 strips bacon, cooked and crumbled
4 boiled eggs, chopped
1 1/2 lbs. small red skin potatoes, cleaned and quartered
Salt and fresh ground black pepper to taste
Directions:
- Cook potatoes in a large pot of boiling water, over medium high heat until soft. Drain and cool. (Leave skins on.)
- To make dressing, whisk together plain Greek yogurt, mayo and lemon juice in a large bowl.
- Add cooled potatoes, green onions, celery, eggs, and crumbled bacon to large bowl and stir with dressing.
- Season with salt and black pepper to taste.
