Yes, that’s right, here’s a JELLO recipe! You can’t be born and raised in the Midwest and not have a good JELLO recipe. This one comes from my in-laws and is sweet, tart, and bursting with fresh fruit.
Ingredients:
1 (12 oz.) bag fresh cranberries
2 medium oranges, peeled
1 (20 oz.) can crushed pineapple, in juice
1 cup granulated sugar
2 (3 oz. each) boxes lemon flavored JELLO
2 cups water
Directions:
- In a food processor, pulse cranberries with oranges until finely chopped.
- Place chopped cranberries and oranges in a bowl and stir in sugar.
- Cover and refrigerate 2 hours.
- Add crushed pineapple with juice to cranberry/orange/sugar mixture. Stir to combine.
- In a large microwave safe bowl, bring water to a boil.
- Add both JELLO boxes to hot water and whisk until completely dissolved.
- Pour JELLO into bowl with fruit and mix well.
- Pour mixture into a 2-quart oblong glass baking dish.
- Cover with plastic wrap and refrigerate overnight.
