I love these dense, flavorful muffins for breakfast–it’s like eating apple cinnamon oatmeal as a muffin.
Ingredients:
2 cups tart apples, peeled and shredded
1 1/2 cup all-purpose flour
1 cup quick-cooking oats
2/3 cup brown sugar, packed
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup milk
2 Tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup (8 oz.) plain low fat yogurt
1 large egg
Directions:
- Pre heat oven to 400 degrees F.
- Place shredded apple on paper towels and squeeze out excess water, until barely moist.
- In a large bowl, combine flour and next 6 ingredients (thru cinnamon). Stir with a whisk. Make a well in center of mixture.
- In a medium bowl whisk together milk, oil, vanilla, yogurt, and egg until well blended.
- Pour egg mixture into well of flour mixture. Stir until just moist. (Do not over mix or muffins will be tough.)
- Fold in shredded apple.
- Spray a 12 cup muffin pan with Pam cooking spray.
- Evenly spoon batter into prepared muffin tin.
- Bake 20 minutes or until muffins spring back when touched lightly in center.
- Cool in pans 5 minutes, then remove to wire rack and cool completely.
These muffins are so yummy and easy to make. The kids love them too which makes a nice weekend snack to have on hand.
