Peaches are super sweet, juicy, and cheap right now in California, so it was the perfect time to try this recipe. And it was awesome! Serve the warm crumb bars with ice cream or freshly whipped cream. Yum! I found the recipe on Pinterest, which led me to the site, browneyedbaker.com.
Ingredients:
For the dough:
3 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
1 cup (2 sticks) unsalted butter, cold
1 egg, lightly beaten
For the filling:
5 cups fresh peaches, peeled and diced (about 7 peaches)
2 Tablespoons fresh lemon juice
1/2 cup all-purpose flour
1 cup granulated sugar
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Directions:
- Pre heat oven to 375 degrees F.
- Butter a 9×13-inch baking pan. Set aside.
- For the dough: In a medium bowl whisk together flour, sugar, baking powder and salt. Use a pastry blender to cut in the butter, and then the egg. (The dough will be crumbly.) Pat half the dough into prepared pan. Place pan and remainder of dough in refrigerator while preparing the filling.
- For the filling: Place diced peaches in a large bowl and add lemon juice. Mix gently. In a separate bowl whisk together flour, sugar, salt, cinnamon and nutmeg. Pour over peaches and mix gently.
- Spread the peach mixture evenly over the crust.
- Crumble the remaining dough over the peach layer.
- Bake 45 minutes, or until top is slightly brown.
- Cool completely before cutting into squares.
