I couldn’t decide whether to make banana muffins, oatmeal muffins, or chocolate chip muffins…so I combined all 3 recipes and came up with this awesome new recipe!
Ingredients:
1 cup Greek vanilla yogurt
1/2 cup milk
1/2 cup uncooked quick oats
1 teaspoon vanilla extract
1 large egg, beaten
2 large bananas, very ripe, mashed
1/2 cup brown sugar, packed
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/2 tsp baking soda
2 tsp baking powder
3/4 cup chocolate chips
1/2 tsp table salt
Directions:
- Preheat oven to 350 degrees F.
- Combine yogurt, milk, oats, vanilla and egg with a whisk. Set aside 5 minutes for oats to soften.
- Next, stir in mashed bananas.
- In a separate bowl, stir together brown sugar, flour, baking soda, baking powder and salt.
- Stir flour mixture into yogurt mixture to moisten ingredients. Do not beat. Dough will be very thick.
- Stir in chips.
- Spoon batter by heaping tablespoons into 12-muffin tin coated with cooking spray.
- Bake 20 minutes, until golden brown
