Thank you to my dear friend Susan for this incredibly tasty and easy pie recipe. It’s soooo good!!!
Ingredients:
1 1/4 cup granulated sugar
2 Tablespoons all-purpose flour
1/2 cup butter, melted and cooled slightly
3 eggs
1/2 cup buttermilk
1 teaspoon pure vanilla extract
3 1/2 oz. flaked coconut
1 (9-inch) pie shell, unbaked
Directions:
- Preheat oven to 325 degrees F.
- Unroll pie shell into pie plate and set aside.
- In a large bowl, whisk together sugar and flour.
- Add melted butter, buttermilk, vanilla and 2/3 of the coconut. Mix well.
- Pour into unbaked pie shell.
- Sprinkle with remaining coconut.
- Bake 1 hour. Check after 45 minutes–if it’s browning too quickly, cover loosely with tin foil for remaining baking time.
- Store leftovers in fridge.
