Here’s a simple summer treat that’s sure to please both kids and grown-ups alike! I got this recipe from my step-mom (but I think it originated from Eagle Brand recipes.) I’ve made this rich and creamy dessert many times for company and it always gets rave reviews. You can either serve this pudding in a large trifle bowl, or as I like to do, serve it in individual cups.
Ingredients:
1 (14 oz) can sweetened condensed milk (NOT evaporated milk)
1 1/2 cup cold water
1 (4-serving size) package instant vanilla pudding mix
2 cups whipping cream, whipped
36 vanilla wafer cookies
4 medium bananas, sliced
1 teaspoon fresh lemon juice
Directions:
- In a large bowl, whisk together sweetened condensed milk and cold water. Add pudding mix and beat with an electric mixer for 2 minutes.
- Chill mixture 5 minutes in refrigerator.
- While pudding is chilling, place sliced bananas in a bowl and add lemon juice. Mix gently to coat.
- After pudding is chilled, fold whipped cream into mixture.
- Spoon partial amount of pudding mixture into bottom of serving dish (amount varies depending on if using 1 large trifle bowl or individual cups.)
- Next, top with partial amount of cookies (break cookies into chunky pieces if using individual cups).
- Next, layer with partial amount of banana slices.
- Repeat layers twice, ending with pudding.
- Cover and chill at least 3 hours before serving.
- To serve, top with additional whipped cream and extra cookie if desired.
