These quiches whip up in no time and are a fun finger food to feed a crowd. Loaded with eggs, bacon, and cheese–they are sure to please! I made these for my son’s first Birthday party brunch and was repeatedly asked for the recipe. So here it is!
Ingredients:
6 slices bacon, cooked and crumbled
5 eggs
2 cups sharp cheddar cheese, shredded
1 cup Bisquick baking mix
1/4 cup sour cream
1 Tablespoon fresh chives, chopped
Dash Tabasco sauce
Garlic salt and fresh ground black pepper, to taste
Directions:
- Pre heat oven to 350 degrees F.
- Coat a mini muffin tin (24 count) well with Pam cooking spray.
- In a large bowl, beat eggs with whisk.
- Stir in Bisquick and sour cream.
- Add in bacon crumbles, cheese, chives, Tabasco, garlic salt and pepper.
- Spoon evenly into prepared mini muffin tin.
- Bake 15-20 minutes, until the tops are lightly browned.
- Allow quiches to cool in pan 5 minutes before carefully removing with a small knife or spatula.
I’ve been dreaming about these quiches ever since I had them at Ryan’s birthday party. They are soooo good, I couldn’t stop eating them. I HAVE to make them myself…if only I could get my hands on some Bisquick!
