Kentucky Spoon Bread

Here’s a Southern dish ya’ll gotta try! I first fell in love with this buttery sweet side dish while living in Atlanta. It’s similar to corn bread, but so moist you have to eat it with a spoon. Serve along side barbecue chicken or smoked ham for a great meal. It’s also delish paired with Mexican food, like Creamy Chicken Enchiladas. This recipe comes from a dear family friend.

Ingredients:
1 box (8.5 oz.) Jiffy Corn Muffin Mix
1/2 cup butter, melted
2 eggs
1 cup canned corn, drained
1 cup creamed corn, un-drained
1 cup sour cream

Directions:

  1. Pre heat oven to 350 degrees F.
  2. Spray a glass baking dish with Pam cooking spray. Set aside.
  3. In a large bowl mix together all ingredients, until well combined.
  4. Pour mixture into prepared baking dish.
  5. Bake un-covered 40-45 minutes, or until firm.
  6. Serve warm.
