Cajun Shrimp

My sister got this recipe from Rachel Ray’s TV show years ago. And to quote Rachel Ray it’s “Yum-o!” You can serve these spicy, saucy shrimps as an appetizer with slices of fresh baguette bread and lemon wedges. Or serve the shrimp and sauce as a main course over rice. Either way it’s fantastic!

Ingredients:
1/2 cup extra virgin olive oil
8 Tablespoons butter
8-10 fresh garlic cloves, minced
2 bay leaves
4 sprigs fresh thyme
1 pound large raw shrimp, peeled and de-veined
2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
1 Tablespoon sweet ground paprika
1/2 teaspoon ground cayenne pepper
2 Tablespoons dry sherry

Directions:

  • Pre heat oven to 350 degrees F.
  • Heat olive oil, butter, garlic, bay leaves, and thyme in a large OVENPROOF skillet over medium heat.
  • Cook until butter melts and herbs and garlic are fragrant, about 5 minutes.
  • In a bowl, toss cleaned raw shrimp with Worcestershire sauce, salt, paprika, and cayenne until evenly coated.
  • Add seasoned shrimps to hot skillet with butter mixture.
  • Add sherry to skillet and stir to combine.
  • Transfer skillet to oven.
  • Bake until shrimps turn pink and curl, about 8-10 minutes.
  • Remove from oven and transfer to a serving dish.
