Fresh Cranberry JELLO

Yes, that’s right, here’s a JELLO recipe! You can’t be born and raised in the Midwest and not have a good JELLO recipe to fall back on :) This one comes from my in-laws and I love it! It’s sweet, tart, and bursting with fresh fruit. Serve it as a dessert, or along side a hearty turkey and stuffing meal. Delish!

Ingredients:
1 (12 oz.) bag fresh cranberries
2 medium oranges, peeled
1 (20 oz.) can crushed pineapple, in juice
1 cup granulated sugar
2 (3 oz. each) boxes lemon flavored JELLO
2 cups water

Directions:

  • In a food processor, pulse cranberries with oranges until finely chopped.
  • Place chopped cranberries and oranges in a bowl and stir in sugar.
  • Cover and refrigerate 2 hours.
  • Add crushed pineapple with juice to cranberry/orange/sugar mixture. Stir to combine.
  • In a large microwave safe bowl, bring water to a boil.
  • Add both JELLO boxes to hot water and whisk until completely dissolved.
  • Pour JELLO into bowl with fruit and mix well.
  • Pour mixture into a 2-quart oblong glass baking dish.
  • Cover with plastic wrap and refrigerate overnight.
