Apple Oat Muffins

I love these dense, flavorful muffins for breakfast–it’s like eating apple cinnamon oatmeal as a muffin.

Ingredients:
2 cups tart apples, peeled and shredded
1 1/2 cup all-purpose flour
1 cup quick-cooking oats
2/3 cup brown sugar, packed
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup milk
2 Tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup (8 oz.) plain low fat yogurt
1 large egg

Directions:

  1. Pre heat oven to 400 degrees F.
  2. Place shredded apple on paper towels and squeeze out excess water, until barely moist.
  3. In a large bowl, combine flour and next 6 ingredients (thru cinnamon). Stir with a whisk. Make a well in center of mixture.
  4. In a medium bowl whisk together milk, oil, vanilla, yogurt, and egg until well blended.
  5. Pour egg mixture into well of flour mixture. Stir until just moist. (Do not over mix or muffins will be tough.)
  6. Fold in shredded apple.
  7. Spray a 12 cup muffin pan with Pam cooking spray.
  8. Evenly spoon batter into prepared muffin tin.
  9. Bake 20 minutes or until muffins spring back when touched lightly in center.
  10. Cool in pans 5 minutes, then remove to wire rack and cool completely.
