Grilled Peppers Stuffed with Creamy Swiss Cheese

My mom recently brought these peppers to a BBQ and I’m pretty sure that I ate them all. No really, I think I did eat every last one. They are SO GOOD! And so simple to do. Buy a bag of those small sweet peppers that you see at most grocery stores, cut ’em in half, and stuff ’em with a wedge of Laughing Cow Creamy Swiss Cheese. Then grill ’em up and serve. I dare you not to eat them all. No wait, I double dare you! Big thanks and hugs to my mom for this recipe!

1 bag of small sweet peppers, assorted colors
2 wheels of Laughing Cow Creamy Swiss Cheese
Extra Virgin Olive Oil, for drizzling


  • Rinse peppers. Cut in half length-wise. Remove seeds.
  • Stuff with a wedge of cheese.
  • Lightly drizzle with olive oil.
  • Grill over medium heat until peppers begin to char on the bottom and cheese begins to get slightly gooey.
