Banana Layer Cake

Share

Here it is! My famous banana cake recipe! Except that it’s not really mine–it came from Cooking Light magazine. 🙂 But boy is it a favorite in my house and among my friends. It was my son’s 1st birthday cake, my friend Meg’s hubby’s birthday cake, and my friend Sarah’s birthday cake too. Sarah has gone so far as to declare it the best cake she’s ever eaten. Bake one for your next special occasion and see if you agree!

Ingredients:
2 cups all purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/8 teaspoon salt
1 1/3 cups granulated sugar
1/3 cup vegetable oil
1 1/4 teaspoons vanilla extract
2 large egg whites
1 large egg
1 cup mashed ripe banana
1/2 cup low-fat buttermilk

Directions:

  • Preheat oven to 350 degrees F.
  • Coat 2 (8-inch) round cake pans with Pam cooking spray and line bottoms with wax paper. Coat wax paper with cooking spray. Set aside.
  • Lightly spoon flour into dry measuring cups and level with a knife.
  • Combine flour, baking powder, baking soda, and salt in a small bowl, stirring well with a whisk.
  • Place granulated sugar, oil, 1 1/4 teaspoons vanilla extract, egg whites, and egg in a large bowl.
  • Beat with a mixer at medium speed until well blended.
  • Add mashed banana and beat well.
  • Add flour mixture and buttermilk alternately to sugar mixture, beginning and ending with flour mixture.
  • Pour batter into prepared pans.
  • Bake 35 minutes or until a wooden pick inserted in center comes out clean.
  • Cool in pans 10 minutes on wire racks then remove from pans.
  • Peel off wax paper and cool completely on wire racks.
  • Frost with cream cheese frosting, if desired. (Recipe listed separately on blog.)

  1. I used this recipe and made cupcakes for Sophie’s 3rd birthday party at school today. There were only a few crumbs left on the children’s plates! Thanks for sharing.
