Three Cheese Quiche

November 8, 2009

I first tasted this wonderful quiche at my friend Karen’s house for brunch. And I instantly loved it! It’s simple, light, and delicious. So thank you Karen, for making this recipe and for sharing it with me :) Serve with Breakfast Potatoes with Bacon for breakfast or a Mixed Salad with Balsamic Dressing for lunch.

6 eggs
1 cup heavy cream
3/4 cup milk
1 Tablespoon flour
1 Tablespoon minced, dried onion
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon paprika
3/4 cup mozzarella cheese, shredded
3/4 cup sharp cheddar cheese, shredded
3/4 cup Swiss cheese, shredded
1 pre-made 9-inch pie crust

  • Preheat oven to 450 degrees F.
  • Place pie crust in glass pie dish and press to fit. With the tip of a knife, dot several tiny holes in crust to vent. Pre-bake pie crust 5 minutes.
  • In a large bowl, whisk together eggs.
  • Add cream, milk, flour, salt, pepper, and paprika. Whisk until well combined.
  • Stir in cheeses with a spatula.
  • Pour egg mixture into pre-baked pie crust.
  • Place quiche in oven and bake 40 minutes, or until a knife inserted in center of quiche comes out clean.
  • Let stand 5 minutes before slicing.
