Tortellini Gorgonzola Salad

I came up with this recipe in an effort to duplicate a salad I used to get in Amsterdam. The Dutch definitely know how to do salad! They combine things in new ways that are delicious. This salad is sweet and zesty and filling enough to be a main meal. This recipe makes enough salad for 2 people.

Ingredients:
4 cups romain lettuce, cleaned and torn into bite size pieces
2 cups cheese tortellini, cooked and cooled
1 small tart apple, diced
3/4 cup dried sweet cranberries
3/4 cup walnuts, chopped
1/2 cup green onion, chopped
1/2 cup Gorgonzola cheese, crumbled
Salad dressing of your choice

Directions:

  • Place lettuce in a large serving bowl.
  • Layer remaining ingredients on top.
  • Top with salad dressing of your choice–I recommend balsamic vinaigrette
