Potato Salad

Here’s my go-to recipe for potato salad. Friends and family gobble it up whenever I serve it! It’s lighter and fresher than store bought, and doesn’t taste like a big blob of mayo. You can serve it with just about anything…hot dogs, burgers, chicken, or steaks.

Ingredients:
3 Tablespoons sour cream
3 Tablespoons mayo
2 Tablespoons fresh lemon juice (do not use bottled)
1/2 cup green onions, chopped
2 strips bacon, cooked and crumbled
2 pounds small red skin potatoes, cleaned and quartered
Salt and fresh ground black pepper to taste

Directions:

  • Cook potatoes in a large pot of boiling water, over medium high heat until soft. Drain and cool.
  • In a large bowl, whisk together sour cream, mayo and lemon juice.
  • Add cooled potatoes, green onions, and crumbled bacon to large bowl and stir with dressing.
  • Season with salt and black pepper to taste.
