Tip: Stir-Fry Technique

It’s taken much trial and error for me to learn to stir-fry properly. Hopefully these tips can save you the time. The key is to cook food in hot oil, over high heat, quickly. I recommend using a non stick wok-skillet or deep saute skillet. You also have to stir the food often while it cooks (hence the name “stir” fry…get it?) Also remember to use vegetable oil, not olive oil–vegetable oil can withstand high heat. And don’t over-crowd the pan when cooking meat. Over-crowding steams the meat, and you want to brown it.
